Author Mary McCartney’s pleasure in food and family infuses Food: Vegetarian Home Cooking with enthusiasm and warmth.
Growing up in a vegetarian family and having Mum at the helm in the kitchen, encouraging us all to dive in, was the best education I could have asked for. My whole family are real foodies, because everything we ate as we grew up was simply delicious, and all of it was hassle free, quick, and uncomplicated….
I like uncomplicated cooking, so usually it needs to be kept quite simple and not too time-consuming. I enjoy cooking with friends and family around me; it’s certainly a social activity for me. When friends come over I don’t go overboard trying to concoct culinary masterpieces, but stick to my usual cooking style which is relaxed, straightforward, and stress-free — the empty plates at the end of a meal tell me they are happy!
And the recipes really are uncomplicated and delicious. It’s vastly appealing that they use, almost always, simple everyday ingredients. For instance, here are some quick sandwich ideas:
As you see, there’s not even a separate section devoted to vegetable recipes — yet of course vegetables show up almost everywhere.
Even non-vegetarians will find plenty to love among these recipes. Buttered zucchini with cheesy polenta? Mushroom and leek lasagna? All the comfort foods are here — shepherd’s pie, mac and cheese, French toast, spaghetti, quiche, in simple recipes using healthy ingredients, and never any meat. The soups and salads all look and sound wonderful. There’s a section on basics, where you learn how to roast potatoes and make pie crust, vegetable stock, coleslaw, gravy, oven fries…. You can tell that McCartney really loves desserts — check out the luscious versions of classics such as cakes, brownies, and cookies, plus fruit-inspired bakes and crumbles and tarts, even a mixed nut pie and an ice cream cake.
